Our ceaseless search for sustainable, delicious & out-of-the-realms-of-the-ordinary ingredients, brought us to the Cotswolds, where Simon Gaskell of The Real Boar Co. keeps his herd of happy, hairy pigs.
They look positively prehistoric (think Asterix) but tick all our boxes. They are British, slow-grown to super welfare standards, high in protein & low in saturated fat. The award-winning charcuterie he produces is exceptional and would grace the finest antipasti board & the fresh wild boar makes rare breed pork pale by comparison.
